Origin of Dongpo Pork

Legend has it that during his tenure in Hangzhou, Su Dongpo led the people in dredging West Lake. In gratitude, the locals presented him with pork. Su Dongpo instructed his chefs to cut the pork into cubes and cook it using his special method before distributing it to the people, who greatly enjoyed it. This cooking technique later spread and evolved into the Dongpo Pork we know today.
